Broiled Asparagus


Broiled Asparagus

1 pound asparagus, tough ends snapped off
1 tablespoon extra-virgin olive oil
Salt and pepper
Fresh lemon juice (optional)

Adjust an oven rack 6 inches from the boiler element and heat the broiler. Toss the asparagus with the oil and sprinkle with salt and pepper. Lay the spears in a single layer on a rimmed baking sheet.
Broil the asparagus, shaking the pan occasionally, until they are tender and lightly browned, about 10 minutes. Sprinkle with lemon juice (if using) before serving.

Variation
Broiled Asparagus with Soy-ginger sauce

Substitute vegetable oil for the extra-virgin olive oil when cooking the asparagus.

Whisk together ¼ cup fresh lime juice, 3 tablespoons toasted sesame oil, 3 tablespoons soy sauce, 2 minced scallions, 2 minced garlic cloves, 1 tablespoon honey. Drizzle over the broiled asparagus before serving.
